BRIEF SUMMARY OF THESIS TOPIC
What makes a memorable fine-dining experience? Customers’ and Chefs’ perceptions within a fine dining context.
The overall aim of this thesis is to identify key elements (dimensions) associated with high quality fine dining experiences. The research will incorporate a series of semi structured interviews examining, both hospitality industry professionals’ and customers’ experiences of specific meals in a fine dining context, and thematically analyse their reports. Having identified specific themes these will be utilised in a quantitative survey of customers in order to determine key elements of fine-dining experiences identified by both chefs and customers. The proposed research will contribute to the understanding of the hedonic properties of a fine-dining experience.
