Tiara’s Patisserie Journey from Home Baker to Successful Entrepreneur
When Tiara Sucipto first arrived in Sydney from West Borneo in Indonesia, she carried with her a lifelong dream - to master the art of pastry and open her own bakery. Now, as the proud co-owner of Pantry Story, a thriving bakery-café on Parramatta Road in Sydney, Tiara reflects on her journey from student to successful entrepreneur.
Tiara’s love for patisserie started early. “I’ve been wanting to study patisserie since I was young,” says Tiara. Her search for reputable training, strong curriculum and a location near Sydney CBD led her to William Angliss Institute, where she completed a Certificate IV in Patisserie. The program provided her with the essential skills, knowledge, and industry connections that played a crucial role in her career.
“The practical and theory classes helped me to have the confidence to open my shop,” she explains. “What I learned in class - especially in daily operations and problem-solving -became incredibly useful when running my own business.”
Learning Beyond the Classroom
One of the most valuable aspects of Tiara’s education was the mentorship from her teachers. “They were always supportive and encouraged us to think outside the box,” she recalls. Their emphasis on creativity allowed Tiara to develop her signature style - blending traditional Asian flavours with classic patisserie techniques.
Receiving positive feedback from her trainers on her unique creations reinforced her confidence. “I always love putting an Asian touch on my pastries, and hearing that encouragement made me believe in my vision even more.”
Beyond the coursework, the friendships she built at William Angliss Institute left a lasting impact. “Going out with friends from different countries, learning about their cultures, and exploring new restaurants and pastry shops was such a special experience,” she says. “One of my best memories was our marzipan class where we laughed so much at everyone’s funny creations.”
From Home Baking to Bakery Owner
Tiara’s entrepreneurial journey began humbly, by baking and selling pastries from home during the COVID-19 pandemic in 2020. As demand grew, she expanded to market stalls before securing a permanent location for Pantry Story.
She credits her studies for preparing her to take this leap. “The hands-on training, industry placements, and networking with alumni all helped me get here,” she says. “Working in different places and meeting fellow Angliss graduates meant we shared the same high standards, which made collaboration even better.”
At Pantry Story, Tiara and her co-owner, Hari Wibowo, delight customers with unique pastries, including pandan cookies, beef rendang and potato hand pie, a variety of croissants and focaccia slices. Her commitment to quality and creativity has quickly made the bakery a local favourite.
Looking Ahead: Growing the Pantry Story Legacy
Tiara’s aspirations continue to evolve. “In the next five years, I hope to keep learning, create more amazing pastries, and work with senior pastry chefs from around the world,” she says. Excitingly, she and her team are set to expand Pantry Story with a café and deli next door in 2025.
Her advice to aspiring pastry chefs? “Go for it! You’ll create incredible products, meet inspirational people, and most importantly, always be surrounded by delicious food.”
For Tiara, staying humble and embracing lifelong learning have been key to her success. “There’s always more to learn. Accepting feedback and new ideas helps build strong relationships and makes you a better chef.”
With her unwavering passion and dedication, Tiara is not just crafting pastries - she’s creating a story worth savouring, one bake at a time.
When asked about her proudest career moment, Tiara shares a particularly exciting experience - collaborating with Indonesian musician Niki Zefanya to create pastries inspired by her favourite foods. “I made an Indomie Pie and a Banana Fritter Pain Suisse. It was so wonderful to create something for someone I admire,” she said.
