Nerves turn to new skills when students meet Japanese celebrity chef

Students sharpened their knives for a masterclass with one of the world’s most highly regarded celebrity chefs, Chef Hiroyuki Sakai, when he was in Australia for a series of special events including the sold-out “Dinner by Iron Chef Hiroyuki Sakai” evening at Balgownie Estate in the Yarra Valley.

The 15 lucky student chefs were introduced to new flavours and techniques as they recreated Chef Sakai’s signature dish using the highest grade imported Japanese wagyu. The class was also guided by Assistant Chef Ikuei Arakane and local star Chef Mark Normoylefor what was described as a “very very fun” experience.

“I learned a lot of things, especially how much attention they pay to detail,” said Megan Chin who attended the masterclass while undertaking Certificate IV in Patisserie. “I was a bit nervous when the chef walked past but he was very friendly and willing to help and guide us.”

William Angliss Institute was the only training institute visited by Chef Sakai and his team while on their whirlwind journey to Australia. Having attended the Melbourne CBD campus previously, this visit offered an exclusive training opportunity for Certificate IV in Patisserie students to see the master in action and learn in a masterclass setting. 

“It was a great experience,” said Mandar Thombre, also studying Certificate IV in Patisserie. He found the unique chance to learn from the famous Japanese Chef Sakai and his team a real highlight. “I learned a lot and am happy to be here." 

“This is a rare opportunity and a fun lesson I’ll be telling my family and friends about.”

“I learnt how to present food better and now my dish looks like it’s from a high-end restaurant,” continued Mandar when reflecting on his exclusive cooking class. When asked how it enhanced his learning at William Angliss Institute he remarked, “It was great to learn about the fusion of Japanese and other cuisines.” 

Chef Sakai adds to the list of master chefs who visit the Institute, offering skill-enhancing opportunities and insights for those lucky to participate.
